Punjab's Traditional foods

Nihari

Nihari is a rich, slow-cooked meat stew, considered the national dish of Pakistan, with origins in 18th-century Mughal Delhi. It is traditionally made with beef, lamb, or mutton shanks and bone marrow, and flavored with a blend of aromatic spices, including long pepper. The name comes from the Arabic word for “morning,” as it was historically a breakfast dish, but it is now enjoyed any time and is often served with naan.  

Poori chana

Punjabi poori chana is a traditional breakfast of deep-fried flatbreads (poori) served with a flavorful chickpea curry (chana masala). The chickpeas are cooked until soft and then simmered in a rich, spicy gravy made from onions, tomatoes, ginger, garlic, and a blend of traditional Punjabi spices. This savory and slightly tangy dish is often paired with sweet halwa, making it a popular festive or breakfast meal. 

BIRYANI

biryani is a popular celebratory dish in the region, adapted with local flavors, making it a significant part of Punjabi cuisine. It is a mixed rice dish traditionally made with basmati rice, meat (like chicken, lamb, or beef), and spices. Punjabi versions often incorporate rich spices, and variations like Punjabi Pulao Biryani blend Punjabi and biryani elements, with specific recipes featuring ingredients like dried plums and yogurt for a unique flavor. 

Makki ki roti

Makki ki roti is an unleavened flatbread made from maize flour, making it naturally gluten-free and a great alternative to wheat for those with gluten sensitivities. 
  • Rich in vitamins and minerals: Maize flour is packed with essential nutrients, including iron, phosphorus, magnesium, and zinc, which contribute to bone strength and overall immunity.
  • Aids digestion: The high dietary fiber content promotes a healthy gut, regular bowel movements, and can help prevent constipation.
  • Helps manage weight: The fiber in maize flour keeps you feeling full for longer, which can help curb overeating. When consumed in moderation, it is a healthy option for weight management.

Lassi

Lassi is a traditional yogurt-based beverage from the Punjab region of the Indian subcontinent, not a food itself. It is a drink, not a solid food, and is a popular way to cool down, especially in the summer months. Traditional lassi is made from yogurt and water, and comes in sweet, salty, or spiced variations. Lassi, a traditional yogurt-based drink, provides numerous benefits for female gut health due to its rich probiotic content, high nutritional value, and hydrating properties. The beneficial bacteria in lassi can help regulate the gut microbiome, which is vital for digestion, immunity, and overall wellness. 

Seekh kabab

Seekh kabab are spiced, minced meat (typically lamb, beef, or chicken) cylinders molded onto skewers and grilled. The name “seekh” means skewer, and the kebabs are flavored with aromatic ingredients like ginger, garlic, onions, and herbs, then traditionally cooked on a barbecue, in a tandoor, or in a pan.
